A muffin by itself might sound like a meager breakfast, but with the added granola these are surprisingly substantial.

￼2 cups all-purpose flour1 cup firmly packed light brown sugar1 tsp. baking powder1⁄2 tsp. baking soda3⁄4 tsp. table salt2 cups Coconut-Pecan Granola (page 42), divided1 large egg11⁄4 cups buttermilk1/3 cup vegetable oil1 tsp. vanilla extractPaper baking cups
1. Preheat oven to 400°. Combine first 5 ingredi- ents and 11⁄2 cups granola in a large bowl; make a well in center of mixture.
2. Whisk together egg and next 3 ingredients; add to dry mixture, stirring just until moistened. Place paper baking cups in a (12-cup) muffin pan. Spoon batter evenly into cups. Sprinkle with remaining 1⁄2 cup granola.
3. bake at 400° for 18 minutes or until a wooden pick inserted in centers comes out clean. Cool in pans on wire racks 5 minutes. remove from pans to wire racks. Serve warm, or cool completely (about 30 minutes).
